Pumpkin Bread
Makes two loaves of bread
Ingredients
- 3 eggs
- 2 cups granulated sugar
- 1 cup oil (I use canola oil, but follow your heart)
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons cinnamon
- 1 can (16 oz.) pumpkin
Procedure
- In a bowl, beat eggs, then add oil, sugar, and vanilla
- In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cinnamon
- Alternate between adding the flour mixture and the pumpkin in to the egg mixture, mixing as you go
- Grease and flour two small bread pans, and divide the batter between them. If you wish, now is the time to add chocolate chips, walnuts, or other garnish to one or both of the loaves
- Bake the loaves at 350F for between 45 minutes and an hour, then remove and serve!
Note: You can replace the pumpkin with two cups of grated zuchini to make an equally delicious Zuchini Bread, or two cups of mashed bananas for Banana Bread!
