Pesto Grilled Cheese Recipe
Makes about two samiches
Ingredients
- 4 eggs
- salt to taste
- 4 tablespoons soft butter
- 4 slices sourdough bread
- 1/2 cup shredded cheddar cheese
- 1/2 cup other soft cheese
- (havarti or fontina is recommended, but any soft cheese will do!)
- 1/2 cup basil pesto
- 2 tablespoons fresh chopped chives
- honey to taste
Procedure
- Mix the eggs and salt together, then put them over medium heat. Cook it until its set, but still notably soft, as it'll do more cooking with the bread.
- On two slices of bread, cover one side with butter, and the other side with eggs, cheeses, and pesto, before putting their counterpart bread slices on top.
- Place these sandwiches on the same pan you cooked the eggs on, and put them over high heat until each side is crispy and brown
- Sprinkle chives and honey over top of both sandwiches, then enjoy!
