Buttermilk Pancakes
Can feed either eight people, or four hungry people
Ingredients
- 2 cups flour
- 3 tablespoons sugar
- 1&1/2 teaspoons baking powder
- 1&1/2 teaspoons baking soda
- 1&1/4 teaspoons salt
- 2&1/2 cups milk
- 2&1/2 tablespoons vinegar
- 2 eggs
- 3 tablespoons melted butter
- 1 tablespoon unmelted butter
- Berries, fruits, chocolate chips, or whatever your heart desires
Procedure
- Mix milk and vinegar together and let sit at least five minutes.
- Mix flour, sugar, baking powder, baking soda, and salt together in a separate bowl.
- Make a well in the dries, then fill it with milk, butter and eggs, before whisking together (final product should have lumps, but no dry bits).
- If your batter is still too thin, add up to a cup of flour to the mixture.
- Melt your last tablespoon of butter on top of a skillet.
- Add batter to the skillet, using about 1/3 cup for each pancake.
- If you have any berries or texture-adding elements, drop them onto the pancakes directly after putting them on the skillet.
- Let pancakes sit until they start forming bubbles in their centers. When this happens, flip them using a spatula, and let sit for the same amount of time on the other side.
- When brown on both sides, remove them from the skillet and enjoy!
